Overgrown: Finding the Stronghold

A few nights away, doing other things and trying to catch up on sleep before starting the new job. Tonight, I just went into some roguelike dungeons, fought mobs and cleared levels. Then, comically, I tp'd to Albertville and took a Bailey's daily quest to kill 10 skeletons ... only to have no skeletons at all in those dungeons for the next half hour. I also found an odd house sticking out of a cliff face, with a villager outside, iron golem inside, and some chests of stuff from the Patchwork mod. There was a button at the top of a two-high laddder, but I could not figure out what it does, if anything.
The last half of the visit was just running around, exposing more of the world map, but still not seeing anything like a beanstalk from the Pinkly Sheep mod. I have never found one. Do they not generate naturally at all? The wiki just talks about Lost Beans in Stronghold chests. Well, I have not went out to find the Strongholds in thie world yet, either.

4/25/2021 Overgrowth-1-1
I spawned on Plains Tower a night, which has large plains of gravel around it, so I teased some creepers into helping me excavate a stack and a half. Neaby was a Quark marble deposit that ran fron 71y all the way down to 49y, so that's a major resource for future use. Nearby is waypoint "plains dng" with another tower on the hill nearby.
I cleared level one and most of level two of "plains dng" then tp'd back to Brixton, made some eyes of ender, and started off to find a stronghold. I stumbled across a little 5x5 stone brick structure buried in the ground. Trapdoor down to small room with bed, chest, iron door. Seemed like there was more, and yes, one of the floor blocks was supposed to be triggered by something (I tried cooking something in the furnace), uncovering another ladder down to ... OUCH a clamp trap. New room: the chest opens a hole in the wall with a dispenser behind it shooting arrows and cherry bombs. Ah, good ol' DungeonTactices mod. Sure enough, there was an alchemical cauldron from that mod here, and that's where the traps come from. These are fun to explore. There's a brewing stand, enchanting table with four bookshelves and the sounds of a something walking behind the walls. Not much else there, the sound was a skeleton in natural cave below.
Nearby was a small pit with Quark jasper (didn't know that was a thing but it's a nice reddish color) and red sandstone, marked for future mining.
(1146) Ok, the eye took me east 1500 blocks to 410x then turned north. And around -2100 they went into the side of a huge hill, so time to start digging.
(1154) Ladder down from 96 ... at 58 I would have fallen into lava, worked around it, and at 47 I hit the roof of the stronghold itself. Perfect.
(1157) Already found the portal room and library. Looking for chests, for lost beans. Huh, just a one floor library, but with the creepy sound of flying books -- I suppose that is the atmosphere mod since no actual flying books exist in this world. Though I did find a pit with some zombie variants called dwellers.
(1211) Took a while going through broken hallways to find two more chests. No lost beans, but 2 rare mega loot cases and some silver and gold coins and repair paste.
(1230) Need to get to bed. Did not find any more stronghold chests. Tp'd back to Brixton and dropped off the goodies. The mege loot cases were two pieces of viking armor (muddy brown) and an axe with mining speed 17.
